Want a sumptuous beef dish without the excess carbs? Try this delicious and easy to cook Low Carb Paleo Beef Stroganoff recipe!
I’ve actually been on a low carb diet for a few months. By now I’ve learned to enjoy eating tasty and healthy veggie dishes that are easy to make. However, lately I’ve been craving savory beef comfort food my mom used to make. To satisfy my hunger pangs, I figured there must be a healthy, low carb version of the creamy beef stroganoff I enjoyed at home.
True enough, when I did my research, I was not disappointed!
Over the weekend, I learned how to make this healthy one-pan Paleo Beef Stroganoff. It’s just like the savory beef dish my mom made. But this time, it had less carbs and it’s made with grass-fed beef.
From preparing the ingredients to cooking the dish, it literally just took me 20 minutes to make. Most of all, it was absolutely filling and delicious! I even had it for lunch the next day. Try this recipe for yourself and enjoy!
Low Carb Paleo Beef Stroganoff Recipe
Ingredients: Serves 4
- 1 lb. ground beef – preferably lean grass-fed beef
- 1 tablespoon Worcestershire sauce
- 6 button mushrooms, sliced
- 1 teaspoon unsalted butter
- 1 small onion, chopped
- 1/4 cup low sodium beef broth
- 1 green bell pepper, chopped into thin strips
- 1 teaspoon lemon juice
- 1/2 teaspoon paprika
- 1/2 teaspoon of pepper
- Half a cup of sour cream
- Prepare all the ingredients. Slice the mushrooms and dice the onion. Chop the green bell pepper into thin strips.
Take a large pan and melt the butter over medium heat. Add the mushrooms and cook for about 5 minutes. Remove the mushrooms from the pan and set it aside.
Add the onion into the pan and let it cook for a minute. Then add the grass-fed ground beef, low sodium beef broth and Worcestershire sauce. Make sure to stir the ingredients well. Heat the ground beef for 15 minutes until it’s browned.
- Stir in the paprika, pepper, cooked mushrooms and lemon juice to the pan. Let it simmer for a minute and remove the pan from the stove.
Finally, pour in the sour cream. Mix it well until the ground beef is covered with the cream. Take note: DO NOT heat or boil the pan after adding the sour cream. This will cause the cream to curdle into chunks. Just mix it in while it’s still warm.
There you have it! Now your Low Carb Paleo Beef Stroganoff is ready to serve!
Place the dish on a large bowl or plate. Take a serving spoon and layer generous servings on the bowl. Tasty Tip: This Paleo Beef Stroganoff goes well when wrapped in romaine lettuce or served with fresh zucchini noodles.
